You Scream, I Scream, We All Scream for Ice Cream! Even Joe Screams for Ice Cream.

I bet that you have had ice cream at some point in your life. It seems to be one of the 'universal deserts' that everyone loves. Especially home made ice cream, which has that unique all natural flavor. No difficult to name artificial ingredients (a popular one is potassium sorbate or C6H7KO2), just fresh berries, milk, cream, etc. Definitely not the store bought stuff!
At one point we had a young man who lived on our farm with his wife and who did some work for us. His name was Joe. Joe loved milk and ice cream, but he had a very bad case of lactose intolerance. In his words, "I love milk, but I just can't drink it.". One day I said to Joe, you should try our sheep's milk - Joe tried it, and he loved it. And it didn't cause him any problems. A little later, Joe came up to me one day and said, "Ed, I love ice cream, but I haven't been able to eat it for years. It just tears me up! Could you make ice cream out of sheep's milk?". So, I did some experimenting, and worked on recipe's and came up with a 100% sheep's milk ice cream - and you know what, Joe was able to eat it without any of the stomach issues he had in the past! This is how our ice cream was born. All thanks to Joe!
So now, we are really excited to announce that we will be opening a sheep's milk ice cream creamery by the spring of 2026. The equipment is on order, our building is on order, and we are working on the infrastructure work (electric, septic, etc.) for the building. We are blessed with an excellent set of investors who are supporting us and are super excited about this project.
Our creamery is named "Just For Ewe Creamery" and will be making all natural ice cream (no preservatives) using natural ingredients including sheep's milk, sugar, corn syrup, berries (not flavorings) made using a French style custard base. It's amazing. We have been developing and testing the recipe for the last two years to make the perfect ice cream. In addition to the traditional vanilla, we make strawberry, blue berry, blackberry, cinnamon apple, peach, butter pecan, and cookies and cream. And we are working on some new favors! We can't wait to bring our sheep's milk ice cream to you!

More on the Health of Sheep's Milk
While some studies and antidotal evidence has shown that individuals with lactose intolerance can tolerate sheep's milk better than cow's milk, I'm not aware of any definitive studies on this. However, there is a significant amount of data available on the benefits of sheep's milk including:
All sheep's milk is A2 beta-casein while cow's milk can contain both A1 and A2 beta-casein. A1 is a significant contributor to digestive discomfort due to lactose intolerance;
Phospholipids are important to improving gut health and Sheep's milk has almost twice the amount of phospholipids relative to human, cow, goat or even camel milk!
Sheep's milk contains more 'good' polyunsaturated fats like omega-3 and omega-6 than cow's milk.
Sheep's milk typically has less lactose than cow's milk.
Because of my academic experience, I can't help but throw in a chart showing some of the detailed differences in cow, goat, and sheep's milk!

The bottom line is that Sheep's milk is really good for you, it tastes great (our customers often compare it to 'half and half' milk), and for some folks with lactose intolerance symptoms - it can be a great alternative to cow or goat's milk.
